Aulds the Bakers have been producing delicious day fresh bakery products at our bakery in Greenock for over 120 years, working 24 hours a day to ensure that you get fresh products each and every day. Some of our extra-special products include our award-winning Morning Rolls made with premium quality Canadian wheat. Aulds Special Pies filled with Aberdeen Angus Beef and a blend of special spices and winner of the World Pie Championship not once but twice. Other highly awarded products and customer favourites in the savoury range include our Steak Stoaters, Sausage Rolls, Mince Bridies, Savoury Pies, and Mac & Cheese pies.

Aulds had previously implemented a traceability system although the system was very restricted and outdated. Many of the site’s processes were still very paper based and there was little digital control over stock.

Aulds The Bakers engaged with TraceSense, a trusted provider of manufacturing systems and working in partnership, the following TraceSense solutions were implemented:

• Stock Control System – Aulds were able to manage their stock paperless, keep records easily of all stock movements and receipts.
• Batch Control – Using our modern recipe weighing system we were able to replace the previous system and now all batch control, recipe tolerances and yields are controlled through the system. All product lot traceability is easily managed, and stock is consumed in real time.
• Process Control – Production throughout the factory is recorded at various stages, pie room etc packing to easily keep control throughout the bakery.
• Quality – All product checks are paperless and recorded through the system. Start Up Checks, Hygiene Checks

The partnership with TraceSense has provided Aulds with the following results:

• Improved Efficiency - Using the system Aulds have been able to access records easily and get real time data.
• Data Visibility - With our dashboard, staff can view data in a user-friendly format.
• Automation - The automation features allow real-time alerts for specific transactions in the system. This allows staff to be proactive and deal with any potential issues. i.e., Incident log raised in the system.

Conclusion
Aulds benefits of using Tracesense have been substantially beneficial to them. They finally have a system they can use and trust.
